Meet our Management Eduardo Vallejo, Rendering General Foreman Eduardo Vallejo started with Cargill in the summer of 2007 as summer help in Plainview, TX. Eduardo interned with Cargill for 3 summers while studying Mechanical Engineering at Texas Tech. Upon graduation, Eduardo started full time with Cargill Plainview as an Engineering Associate. From that role, he became Rendering Supervisor and later moved to Cargill’s Friona TX plant in the same role. He then moved to Dodge City and accepted the role of Rendering General Foreman in November, 2013. Eduardo married his wife Rebeca in 2010. They have 3 children, Gabriella, 10; Eduardo, 5 and Damien, 3. Eduardo likes to hang out with his family, taking a walk or playing in the park. The family likes to head to Texas to visit family and attend Texas Tech Football Games. Eduardo also likes to work with electronics, build computers, weld and tinker with new projects. One new project upcoming will be building a smoker. The family enjoys Eduardo’s Babyback pork ribs, made dry-rub style.
